Is Meat Smoking Different Today?
What is different between old school meat smoking and modern meat smoking? Historically, meat smoking was done as a method of preservation. Because there weren’t any ways to preserve meat, the options were to spice it, or smoke it. One article I read said that the smoke was meant to keep the flies away while the meat was drying in the sun. Smoking today, however, is primarily done for the amazing taste. Meat is easy to get, and when we get it, we can refrigerate it, thus there is no ‘need’ for smoking as a method of preservation. I would argue there is a ‘need’ for us to keep smoking…as smoked meat tastes darn good!
