Is Kombucha tea safe?
I have never come across anyone who had a problem with the safety of Kombucha tea. There have been what appears to be erroneous reports that claim it caused acidosis in two people, investigation by interested people appears to show that the acidosis was in fact due to diabetic conditions not tea consumption (acidosis is a side effect of diabetes). My own experimentation (although limited) showed drinking the tea in recommended amounts actually had the opposite affect; it increased the body pH (more basic, healthier) as measured by saliva pH testing. As with any food item, sanitation is generally regarded as the key to a safe product. It is easy and only takes common sense; avoid contamination (wash your hands, dishes, etc.) and boil the water used in the tea are the main ingredients to safety! In addition the low pH of Kombucha tea acts as a preservative naturally adding to its safety!
