If the soil were completely depleted of minerals and nutrients, a healthy-looking fruit or vegetable would not grow. The nutrients that must come from the soil are phosphorous, iodine, zinc, calcium, copper and iron. If the soil were deficient, the plant would not grow. Having said that, you can maximize the nutritional value by choosing ripe, healthy-looking produce, buying locally, storing produce properly and cooking with little or no water.
