I’m a recovered alcoholic, so just as it is in pregnancy, I must be careful not to have alcohol in anything, so this question I had to sort out for myself some time ago. It is true that cooking evapourates the alcohol out of the wine, so it won’t be a problem for you. But as a matter of interest, my fiance, who appart from being an excellent cook, is also a recovered alcoholic, takes great care in cooking with alcohol, even down to things like vanilla essence which contains alcohol. If it is of concern to you, she made a casserole a few weeks ago and substituted Cranberry juicefor red wine, it was lovely and neither of us could tell the difference.
