Is it possible to perform a cost analysis of a recipe or menu plan?
Yes, the Costing Wizard is available from the “Edit a Recipe” view. The costing wizard allows mapping of each ingredient in a recipe to it’s corresponding entry in the inventory. It allows extreme flexibility in the mapping. For example, if a recipe’s ingredient is freshwater fish fillets – quantity 32 oz, it could be mapped to a 1 lb package frozen walleye fillets – quantity 2. The costing wizard calculates cost based on the Purchase/Bulk unit price. In our example if a case contained 12 1lb packages at a cost of $72.00 and the recipe served 4, the costing wizard would automatically calculate that each package cost $6.00 and that 2 packages would cost $12.00 the total cost of this ingredient in a recipe. The costing wizard aggregates the cost of all of the ingredients to arrive at a total recipe cost. The cost per serving is arrived at by dividing the total cost of the recipe by number of servings.
