Real Turkish Delight has NO gelatin in it they use sugar, water, corn syrup/glucose and a starch like cornstarch or potato starch, set it in a square mold and the cut into cubes and roll in icing/confectioners sugar, flavoured with lemon, rosewater, they also ad nuts like pinenuts or pistachios.
