Is it possible to keep Rabbit alive through the epilogue? And will Rabbit (Dog) be a fully joinable NPC, taking one of the four party slots?

It is possible to have Dog (you get to choose the name you want for him) join your party. If he does join, he takes up a slot just like any other party member choice. Keep in mind that not all NPCs encountered may want to join the party or you may not want them to join. As the player, you choose who will accompany you on your journeys.
