Yes it is possible to have lighter colored eyes and olive skin tone. I saw this national geographic front cover of this little girl in the window of her home and if I am not mistaken I think that she was Turkish actually I cannot remember what part of the middle East that she was from but, she had an olive complexion with blueish/grey eyes, and her hair was darker brown at the roots and then faded to a dishwater blonde toward the ends. To compliment that she was leaning out of a window that was painted red, and the outside exterior was a vibrant blue. The picture was incredible. Not to mention that there are people that are from Brazil that have jet black or very dark hair, olive colored skin and then very light eyes. So yes with genentics I think that almost anything is possible.
