You can get a plug-in called a voice detective which you insert into your audio track (in Cubase or whatever) then you can create a new MIDI track whose input is from the voice detective. If you are playing a monophonic instrument track, the new MIDI track will record the notes as MIDI hits which you can then view as a score in the software’s score editor.
