Safe directions for canning homemade vegetable, dried bean or pea, meat, poultry, or seafood soups are in Guide 4 of the “Complete Guide to Home Canning,” Agriculture Information Bulletin 539, which is available on the National Center for Home Food Preservation website. Home developed recipes, like soup, may be dangerous when canned unless scientifically tested procedures are used. Never thicken these products.
