It depends what you mean, phone companies, both landline and mobile, store records which contain the number dialled, the originating number and the duration; these are primarily for billing purposes but can be looked at by the Police with the correct authorisation. But the actual conversation itself? Not as a matter of course; it would generate far too much data to realistically store, even using a very high compression algorithm. Authorised wire-taps are a different story but are thankfully still rare.
