My mother doesn’t flip fried eggs, she uses much more oil than I do, tilts the pan so the oil pools, and then uses a spoon the splash the oil up onto the yolk. I don’t see the point – it uses more oil, takes longer and usually leaves some white that’s too soft for my taste. (Love runny yolk, but not the whites) Almost all of my mom’s cooking was learned from HER mom, because she did not grow up with FoodTV and the internet like I did. Likewise, I would think that my grandma picked up HER cooking eduction from my great-grandmother, who was from Germany – so it is very possible that this is a European tradition.
