Both are correct as well it would be correct “Omnia amor vincit” or “Amor omnia vincit”. In Latin there are no specific rules for the words’ order even though generally the main verb is placed at the end of the sentence (unless is at the imperative, as a rule placed at the beginning), but this is not at all mandatory. Also the adjective can be placed either ahead or after the noun. It’s just a matter of sound and personal taste…!!
