Yes you can reheat it. When I make paella I take the shrimp out and put them in a dish, reheat the rest of the paella and put it on top of the shrimp to reheat them. I do this because if you heat it all together the shrimp get tough. If you let it sit a minute, then stir it the shrimp will get warmed through.
