Is Industrial Style modern food pubs the only viable model for a successful public house?
From my experience of being a landlady, people really do appreciate home cooking, fresh vegetables and are prepared to pay for it. The 2-for-1 and such like meal deals that the branded operations offer certainly get people in through the door but at such little net profit after having taken out the cost of extra chefs and waiting staff that I personally would rather do half the number of covers but at a greater GP and subsequent NP and have people walk away feeling very pleasantly surprised at both the quality of the food offering and the attentive customer service (as the staff have more time to be helpful and are less stressed!). In my own pubs if I was turning away people because I physically didn’t have the seats then that was good enough for me! With the impending smoke ban it will no doubt be difficult for wet led pubs to survive particularly if they have no suitable outside facilities for the smokers.
