Maya and 3d Max are rendering many thousands of polygons, which is a completely different load on the video card. Sure it would be decent at it, but you’d be stressing parts of the card that games don’t stress. If you want to run Maya and other programs of that kind, I would look into the Nvidia Quadro or ATI’s FireGL series. They’re really good at polygon number crunching, rather than drawing pretty images on a game. Just like the situation with the 7900GT, it will handle games, but not as well as the 7900. For Maya, go with a video rendering card.
