Is Colcannon truly an Irish dish? I need an authentic recipe!?
Hey Im a Real Irish gal and this is how my mam makes it, Im not sure of the quantities though: You boil the potatoes until they’re cooked and ready to mash. While they are boiling, steam or boil the chopped green cabbage(Curly Kale is what we always use).In another pot heat some milk, knob of butter, salt and pepper and a small chopped onion on low heat(again this can be done while boiling potatoes). When its hot through and the onion is soft and cooked mash the potatoes and mix in the cabbage. More salt and pepper and sprinkle with parsley if you have it. Sometimes you can add fried bacon chopped in little pieces and at Halloween you can wrap things in tinfoil and add it and its supposed to predict the year, eg a ring means you’ll be married in the year, a coin means you will come into money in the year and I think a matchstick means you will be poor..Not many people do that anymore though.
