Answer Hi Jennifer, I am not aware of coconut milk being considered a potentially hazardous foods — these are foods that are capable of supporting the growth of harmful bacteria. Coconut milk is, however, a perishable product as it has a very high fat content that will go rancid quickly if left at room temperature. It is recommended that once a can has been opened, it should be refrigerated immediately and used within four days. Do not store in the can but transfer to a glass or non-reactive plastic container.
