Is batter mixture or compound?
A mixture is made up of two or more different substances which are mixed together but are not combined chemically. Batter is a semi-liquid mixture of one or more flours combined with liquids such as water, milk or eggs. When heat is applied to batter in cooking, the trapped gases such as steam and air expand and stretch out the batter. The heat melts the fat and coagulates the flour, eggs and milk. Other chemical reactions also occur. However, the cooked batter is still a mixture and not a compound – a compound is a pure substance.
