Most large, US commercial airports use food service vendors to staff their commercial chain restaurants— e.g. the person working behind the counter at Starbucks is not a Starbucks employee but the airport food vendor employee. I’ve found this is the biggest test if a brand can hold up anywhere— does the food taste the same, service as good, and overall mirror corporate company guidelines. Unfortunately more often than not it doesn’t.
