Is a buffet a cheaper option for dinner?
Not necessarily. While a sit-down, or plated, dinner will cost more for kitchen staff and waiters, a buffet can cost you more in equipment as you’ll need buffet tables, linens, serving utensils and chaffing dishes or platters that you wouldn’t need otherwise. Especially in tight spaces, a buffet can be a bad idea as buffet tables will take up precious floor space that could be put to better use.
