In Cribbage why do I only receive 1 point for a Skunk or Double Skunk?

We want everyone to have a chance to play 2 games. If you were to win by a Skunk in a 2 point normal match, the match would be over. This way everyone gets a chance at at least 2 games per match. But, you still want to try for them so you get an even higher ending score.
