Actually, many of them did and almost all of the early Christians were originally Jews, either by birth or by choice (see Acts chapter 2). Also, the entire New Testament (with the exception of Luke and Acts) was written by Jews who became Christians. Probably the best answer to this question is that some people (both Jews and gentiles) are not willing to accept that Jesus is the Messiah (Christ), no matter how much evidence exists.
