If the Axis started winning in 1943 – who is more likely switch sides?

All of the things you are asking us to picture are totally unrealistic and would never happen. Rommel had some successes but a poor supply line and, even if he had had more men, he really could not beat the British because they had more resources available in Africa and reinforcements could come overland and unopposed. Russia would never give in in Stalingrad and, even though the severe winter worked for the Russians, when summer came, the advantage would still be with the Russians – especially with the severely weakened and hungry German forces. America had the resources (and the steel!) to keep on building ships and aircraft. Even Yamamoto knew they could not beat America unless it was a quick victory. Long term they had no chance. As for someone switching sides, there is no obvious, or even likely, candidate.
