Liquid nitrogen is very very cold, I would say the metal would freeze but that depends on the metal’s temperature and air temperature.

Yes, unless the metal sheet is already at the liquid nitrogen temperature and the whole room is also at the same temperature. We are talking of the liquid nitrogen getting evaporated, not the metal sheet!
