A little fat with carbs WILL slow the uptake of carbs and therefor control insulin better. But if you eat more than 9 grams of carb, you will probably still produce an insulin spike no matter what you do. If you can eat a little protein as soon as possible (within 15 minutes) you might mitigate the spike some. Sears is now saying that you should try to eat the protein part of a meal FIRST before the carb as this will have a very strong control on insulin. My newest take on the diet is that it is actually like two diets in one.
