Legally, you cant use the evaluation copy any further. You can certainly salvage your object and data models, and you can certainly use all the SQL code that is generated by eXoDy or custom-developed by you. You would be tasked with writing all of the Java and XML code that eXoDy generated, and then, of course, you would not be able to use the eXoDy run time. In a nutshell, you would have to replace the eXoDy infrastructure with your own, but you would be able to use anything related to your domain. In particular, you would be able to reuse the all-important database design and code.
