A. First you pick up your bait and ice before you go out fishing. (We can also provide sandwiches and soda, if you’d like.) When you’ve finished fishing for the day, your Skipper will radio ahead to let us know how many totes to bring to pick up your fish, and your estimated time of arrival. That way we are ready to send the truck to the dock to pick up your fish (or we can send a plane or boat out to where you are fishing to pick it up). We will either process it right away (depending on your travel plans) or ice it down until the next day when we will clean and cut up the fish (to your specs), getting it ready to blast freeze (we have two blast freezers that go from 60 F to –25* in seven minutes. IQF stands for “Individually Quick Frozen”). We then package and box your fish and store it until your flight. When it is ready to go, we apply LACEY ACT labels (according to federal regulations) verifying that the contents have been inspected and are to be shipped to the locations you have
