I have used the CARNATION Light and Creamy Coconut Flavoured Evaporated Milk as a substitute for regular coconut milk in my curry, but it has separated and curdled. Why?
CARNATION Light and Creamy Coconut Flavoured Evaporated Milk is ideal for use in cooking, as it is a low fat alternative to traditional coconut milk without compromising the flavour. As traditional coconut milk is high in fat it can therefore be simmered for a longer period of time. Because the CARNATION Light and Creamy Coconut Flavoured Evaporated Milk product has had 98.5% of the fat removed, it is important to ensure the product is added last and simmered for only a few minutes, otherwise the milk will begin to separate.
