I have recently bought some echinacea in an effort to boost my rather low immune system, although on the label it claims that it is not for under 18s. I have just hit 17, will this be a problem or shall i go ahead and take them?

Self-medicating is never a good plan. If you are having a problem with low immune system, you need to be under the regular care of a physician. Always consult with him/her before taking anything. You have no idea what the results might be. The reason is says not for under 18, is to protect the manufacturer and merchant. That way, if something bad happens, they can not be help responsible.
