The emails do not actually come from your mail box. The authors of these malicious programs generally write programs that steal legitimate email addresses in order to propagate the virus. If a person had received an email from you in the past and saved your email address on their mail system, opening a virus-infected file attachment would have propagated email to all the legitimate addresses in their address book.
