A charcoal smoker does a wonderful job of cooking meat! I’ve found the best way is to pile charcoal in the bottom of the smoker. I place wood, like mesquite, around the the edges and then add charcoal lighter fluid and light. Add plenty of water and flavorings to the pan and place in the middle part of the smoker which has not been placed on the bottom part as of yet. Once done, place the middle part of the smoker on top of the bottom. You can place your meat on the top rack and put on the lid. Since smoking can take hours, you need to use plenty of charcoal, plenty of water in the pan, and do not open the lid until you are well into the cooking process.
