How to Sundry Tomatoes?
If you’re patient, you can produce your own sun dried tomatoes, but be aware, the process can take almost two weeks. First prepare the tomatoes by carefully washing them and then cutting them in half, lengthwise. Removing the seeds is optional. Salt is also optional, but will add a little extra flavor and help to draw out some of the moisture. Cutting a slit in the side of the tomato’s skin will also help to help to quicken the process. Place the tomatoes on a plastic screen face down and cover with a cheesecloth to begin the process. Raise the screen by placing an item such as bricks or boards underneath the edges to that air can circulate below. Sit them outside in sun during the daytime, but bring them in each night.
