I have roasted a whole hog two ways: On a spit over an open fire, this requires a large fire (low flame) and constant turning. In a pit, this requires a long cook…dog a pit and fill with wood (or charcoal) and let it burn down to embers. Wrap the hog in a blanket of banana leaves ( I only used banana leaves, don’t know what you could substitute with). Scoop out have the embers and put the wrapped pig in the pit and cover with the embers you removed. Cover the pit with wrist size sticks forming a grid over the pigs and embers. Then bury the whole thing. let cook for 12-15 hours. Best I can offer. Good luck.
