Squash Casserole 2 lb yellow squash Wash, cube and cook until tender. Drain well. Place squash in a greased 1 1/2 qt casserole. Mix together: 2 eggs 1 sm jar Cheez Whiz 1 sm can chopped green chilies 1 sm onion, chopped 1 can cream of chicken soup Put above in casserole over squash. Add cracker crumbs to top. Bake at 350 degrees for 30-40 minutes. Squash Casserole 1/2 c uncooked rice 2 med yellow squash 1 t salt 1/4 t pepper 2 T onion flakes or fresh onions 2 T margarine 2 med fresh tomatoes 2 c water 1/2 c cracker crumbs 1 t sugar Use an 8 or 9 inch pan. Place rice in pan. Slice squash over rice, sprinkle with salt and pepper, onions and margarine. Cover with sliced tomatoes. Sprinkle with sugar, add water. Cover and bake 45 minutes at 350 degrees. Uncover and top with cracker crumbs and cook until brown.
