This is the way I do it for a 2 – 2.5 kg roast: – Pre-heat oven to 250 C. – Spread about 2 tablespoons of good prepared mustard all over the meat – Rub on about 2 tablespoons fresh, coarsely groun black pepper – Put on a rack in the centre of the oven (after it has reached 250 C) for 15 minutes (Put a pan with a little water under the rack to cath the fat as it falls off) – After 15 minutes reduce heat drastically to 110 C. ( I keep the oven door open for a few minutes to reduce heat quickly) – Leave roast for an hour for medium rare, or longer if desired. – Let the roast rest for about 10 minutes after you take it out of the oven. – I usually serve with baked potatoes and greens, usually fresh brocolli.
