How to Make Turkey Stock?
I just made turkey stock for Thanksgiving. I use the stock to make gravy and stuffing. To make turkey stock I recommend using a pressure cooker or crock pot. You will need one package of turkey legs, one onion, a couple of carrots, poultry seasoning, ground sage, salt and pepper. Place turkey legs in pressure cooker and cover with water. Add onion, carrots, poultry seasoning, ground sage, salt and pepper. I season to taste so can’t provide specific measurements. I recommend playing with it; you can always add chicken broth to tame down if you have too much spice. Put the lid on the pressure cooker and cook for 25 minutes. If using a crock pot; cook until turkey is done. Depressurize your pressure cooker. Let the turkey cool and then place in the fridge overnight. Skim off the fat on the top and discard. You have turkey stock.
