Make an egg wash (bath) of egg, mustard (ground or yellow) and hot sauce. You can use about a tablespoon of mustard and hot sauce. Get some seasoned flour and after you dip the chicken in the egg bath roll it in the seasoned flour and fry it until it is golden brown. Make sure the oil is hot enough before you put that first piece of chicken in. If you want to test it to see if it is ready stick a wooden spoon in and if it bubbles around it the oil is ready. Paula Dean is a traditional Southern cook and she uses hot sauce in her egg bath for fried chicken. I added the mustard to mine once and was pleasantly surprised at what it added to an already good idea. The mustard allows the chicken to fry up to a golden brown.
