The trick to a really tender pork stir-fry is to slice (pork loin) it into small strips and tossing in a bit of cornstarch (about 1 Tablespoon is good). Give it a good mix. Let it sit for about 10 minutes. Add in a lite marinade: soy sauce, chopped garlic, chopped green onions, white pepper (if you can find it) black pepper is ok too. Add in a pinch of sugar. Let marinate for about 5 minutes. Stir fry in a little (2 T.) hot peanut oil. Once it’s seared, set it aside in a bowl. Add in some snow peas, sliced mushrooms or just add in some thinly sliced Napa cabbage or Bok choy…or fresh spinach if you can get the other types of greens. Stir fry the greens and add the pork back in until it’s throughly cooked but don’t overcook it. Add in a little drizzle of toasted sesame seed oil (black is best…the darker the sesame oil the better…don’t buy a “blend” of sesame oil…it goes rancid very quickly and doesn’t impart the best flavors).
