A simple pie crust is as follows: Sift together 2 cups flour and 1 teaspoon salt, add 2/3 cup shortening and cut in using pastry cutter or two knives until shortening is like little peas in dough, Add slowly, 5-6 tablespoons COLD water, using just enough for the pastry to come together (will be a little crumbly). Divide dough in half, wrap in plastic wrap, and let it sit for about 1/2 hour. Roll on floured surface til about 1 inch larger than pie plate (use for 2 pies or 1 pie with top and bottom crust).
