There is nothing better than homemade mashed potatoes. A box cannot compare, and they are so easy to make. Peel and quarter a pound and a half of Yukon Gold potatoes, put them in a pan, add a pinch of salt and just enough water to cover. Bring the potatoes to a boil and simmer until tender, about 15 minutes. While they are cooking, warm four tablespoons of heavy cream in a small saucepan with two tablespoons of butter. Drain the potatoes, add them back to the hot pot and pour the cream mixture over them. Mash to your desired consistency, adding milk if needed. Add salt and pepper to taste. Delicious!
