Jambalaya is a great southern dish that is very easy to make. In a skillet cook on high heat 6 slices of bacon. In the drippings cook 1/2 cup minced onion and 1/4 cup of diced green pepper until soft. Add 2 cups of chicken broth, 1/2 cup ketchup, and 1 tablespoon brown sugar. Cover and cook 15 minutes. Cut up 1 pound cleaned shrimp and add, along with 1 cup finely diced cooked ham, and your bacon chopped. Mix 2 tablespoons of cornstarch to 3 tablespoons cold water and add to mixture to thicken. Add salt and pepper to taste and serve over your favorite rice.
