To make homemade vegetable soup, start with with chicken or beef stock (or vegetable stock), add any kind of vegetables you like, along with some herbs such as thyme or rosemary, cheese if you like (I like Parmesan cheese) and simmer until the vegetables are tender. Soup’s on!
