How to make hollandaise sauce?
For Hollandaise sauce, put 3 egg yolks in a sauce pan and whisk lightly. Whisk in 1 1/2 tablespoon lemon juice, add about 2 tablespoons butter and heat over low heat. Whisk constantly until mixture thickens. Remove from heat and whisk in 2 additional tablespoons of butter SLOWLY. Add white pepper and salt to taste. You can add more lemon juice and less butter for a more lemony taste.
