Cucumber Pickle is one of the most easiest recipes. You can add a lot of variety to them by adding more ingredients. However, here is a basic recipe: – 7 lb Cucumber – 2 qt. Pure apple vinegar – 1 Tbsp Salt – 1 Tbsp pickling spice – 4-1/2 lb sugar First of all soak the cucumbers in lime for 24 hours. For this use 3 cups of lime to 1 gallon of water. After 24 hours have passed, soak for 4 hours in cold water. Meanwhile change water after every hour. Then peel, slice and cut the seeds from the cucumber. Make pickle sticks. Then take a large stainless steel boiler and bring sugar, spices and vinegar to boil. Add cucumbers to it and bring to boil. Boil slowly for a hour more. If you allow them to stay in boiler overnight the result will be better. Bring it back to boil in the morning. Then can and seal covering the cucumbers with vinegar and sugar mixture. Then seal them in sterilized jars of your own choice.
