How to make corned beef and potato pie…?
Pastry 8oz Flour 2oz White Flora/Trex 2oz Butter approx 3tbl Cold Water With your finger tips rub fats into flour until it looks like bread crumbs, using a talbe knife stir in enough cold water to make a very firm paste. Wrap in cling film and chill for 30 mins before rolling out. Filling 1lb Peeled potatoes, cut into even sized chunks and boiled for 20 mins in lightly salted water, drain and roughly mash, add 1 can of corned beef 1 finely diced onion, season with pepper and salt if required Roll out 2/3rds of pastry to fit your pie plate, place the potato mix evenly on top, dampen edges of pastry with water, roll out the remaining 1/3 of pastry and place over potato, gently press down the edges to seal and carefully trim off any excess pastry.
