First let me state that I have been in charge of providing the turkey for both Thanksgiving & Christmas for our large family gathering (aprox 35-40 ppl) for the past 30+ years. I have smoked a lot of turkeys during that time. Since I brought the first fried turkey to the table, no one has asked me go back to smoked turkey. I hate to toot my own horn, but I am pretty good at smoking meat whether its turkey or butts or ribs, etc. I have produced some very moist, tender & tasty birds in the past. Even my best smoking effort could match my fried turkeys in terms of tenderness & moistness. I notice the article did not mention injection. It is vital that you inject a turkey before frying. I admit that I never injected or brined a turkey prior to smoking. It is no secret that injecting or brining will produce a moister turkey. I am sure I could come very close to the quality of a fried turkey if I injected or brined one before smoking. He mentioned the cost involved in frying a turkey. Let’s
