Peel a navel orange into 1″ strips, using a sharp paring knife. Navel oranges have a thick, fragrant skin. Gently scrape some of the white rind from the inside of the skin. Poke a hole in the ends of each strip where you want to thread it. Place the orange peel strips on a silpat sheet or waxed paper on a cookie sheet in the oven. Preheat the oven for 200 degrees, set the orange peel sheet in the oven and reduce the heat to 125, or your lowest oven setting. Bake the orange peel for several hours. Test occasionally to see how dry the peel is becoming; if it’s too brittle it may be difficult to work with.
