1. Cut the chicken breast fillets in half crosswise (or as thinly as possible) and season with salt, pepper and paprika; use a mallet to pound them until flat. 2. Place the jamon Serrano, manchego, and roasted peppers on the flattened chicken pieces. 3. Roll the fillets as you would a sushi roll. Refrigerate for 30 minutes to set. 4. Roll the chicken pieces in the flour, then dip in beaten egg, and coat with the breadcrumbs. 5. Pan-fry pieces in hot oil until golden brown. Once done, drain on paper towels. 6. Slice the chicken rolls into 3 equal portions and serve immediately with alioli sauces. Serves 6 as an appetizer. Preparation Time: 20 minutes. Cooking Time: 15 minutes Tip: To make Smoked Pepper Alioli, simply add 1 roasted pepper (chopped) and 1/2 teaspoon Spanish paprika to half of the homemade alioli recipe in the Pinchitos Pescado recipe.
