How to cook a aubergine ?
Aubergine is just Eggplant. Cook it however you like. One of my favorite ways is to slice it, dip it in flour, egg than bread crumbs and fry it in a little olive oil. You can eat it just like that or top it with a nice slice of Provolone or Mozzerella and top with a little Marinara Sauce. It makes a great first course or a better side dish to Veal Picatta.
